Ingredients: 1 teaspoon of fenugreek seeds, 250 g of peppers, 250 g of eggplants, 250 g of zucchini, 2 tablespoons of olive oil, ½ teaspoon of salt.
Preparation:
-Peel and cut the eggplants into cubes then steam them for 20 minutes
-Cut the peppers into cubes as well
-Heat a pan and add the olive oil, peppers, salt and half the fenugreek
-Cook over low heat, the duration will depend on you (if you like well-cooked or crunchy vegetables)
-Add the zucchini, also cut into cubes, with the eggplants and the rest of the fenugreek
-Cover, reduce the heat until the cooking is convenient for you.
