Cloves have a very strong scent, so it’s best to use them sparingly. A good method is to prick them in an onion or a piece of meat, for example. In most savory recipes, around ten nails are used, which allows the dish to be pleasantly flavored. For cake mixes and pastries, a ¼ teaspoon serving is usually sufficient.
Cloves go wonderfully with cinnamon and nutmeg. They give an inimitable flavor in many dishes: homemade broths, stews, roast meat, especially ham, homemade cold cuts, marinades, in mulled wine drinks, in chai tea, jams, spiced breads and cookies, in meat pies.
